Ingredients:
Two chicken fillets
Salt & Pepper
1 onion chopped
Sliced pepper of your choice
3 garlic cloves finely chopped
Tin chopped tomato
1 Tablespoon tomato puree
¾ cup cream
Hot cooked rice for serving
Method
Cut chicken into bite sized pieces. Season with salt and pepper.
Heat butter or oil in a large pan on a medium heat. Add chicken and cook about 2 to 3 minutes per side or until browned. Remove to a plate.
Add more oil to the pan, add chopped onions and garlic and stir while cooking for 1-2 minutes. Add the sliced peppers and cook for 5 minutes, season with salt.
Add the tablespoon of tomato puree and stir into the veggies.
Return chicken to pan, add the tin of tomatoes and bring the mixture to a slow simmer. Cook until chicken is cooked through, about 5-10 minutes.
Add cream and and simmer uncovered for 5 minutes.
Serve with your rice, garnish with fresh herbs if you wish!
