Brazillian Chicken Stroganoff

This recipe feeds 2/3, double up quantity to feed more people!


Ingredients:

  • Two chicken fillets

  • Salt & Pepper

  • 1 onion chopped

  • Sliced pepper of your choice

  • 3 garlic cloves finely chopped

  • Tin chopped tomato

  • 1 Tablespoon tomato puree

  • ¾ cup cream

  • Hot cooked rice for serving

Method

  • Cut chicken into bite sized pieces. Season with salt and pepper.

  • Heat butter or oil in a large pan on a medium heat. Add chicken and cook about 2 to 3 minutes per side or until browned. Remove to a plate.

  • Add more oil to the pan, add chopped onions and garlic and stir while cooking for 1-2 minutes. Add the sliced peppers and cook for 5 minutes, season with salt.

  • Add the tablespoon of tomato puree and stir into the veggies.

  • Return chicken to pan, add the tin of tomatoes and bring the mixture to a slow simmer. Cook until chicken is cooked through, about 5-10 minutes.

  • Add cream and and simmer uncovered for 5 minutes.

  • Serve with your rice, garnish with fresh herbs if you wish!
