Our Creamy Spiced Chicken recipe is a perfect blend of richness and spice, bringing together tender chicken with a luscious sauce made from cream, parmesan, herbs, chilli, and paprika. Whether you prefer it served with fluffy rice or a crisp, fresh salad, this dish is sure to become a new favourite in your meal rotation!
This recipe serves 2 but is easily doubled to serve 4.
Ingredients:
2 Chicken breast
Cornflour
Olive oil
Salt & Pepper
1Tbsp butter
1 Onion diced finely
2-3 Garlic cloves crushed or grated
1tsp Chilli flakes
1tsp Paprika
0.5tsp Smoked paprika
1tsp Basil/Italian seasoning
1tsp Ground cumin
up to 1tsp Chilli powder (depending on taste)
Good grinding of black pepper
Half lemon - the juice
50g Parmesan, grated
100ml Cream
1/4 pint Stock (Chicken or veg, you can use 1 cube if you don't have fresh)
Method
Cut the chicken breasts into strips. Season the chicken with salt and pepper.
Put into a bowl and coat with cornflour - ensure the meat is evenly covered. Next pour over about 1tbsp oil, ensure the chicken is well coated with the oil, there should not be any traces of dry floured chicken left.
Next cook in the air fryer at 190 for 14 minutes, check to ensure the chicken is cooked through and then put to one side. (or fry off the floured chicken in a generously oiled hot pan, or oven bake until cooked through and crispy).
Heat a pan and put in the butter melt, this down. Next add the diced onion and grated garlic - sauté until the onion is soft and turning translucent.
Next add the herbs and spices (including the pepper), stir into the mixture until fragrant.
Add the stock and cream - stir into the mix. Next add the parmesan and the squeezed lemon juice.
Add the chicken into the mix - stir in and heat through the chicken and ensue the parmesan melts into the sauce.
Serve with rice & ENJOY!!
