Easter is the perfect time to gather with loved ones and enjoy a delicious meal together. Ingredients:
2-3 cloves garlic, sliced
2 tablespoons olive oil
Mixed herbs to taste - dried or fresh
Salt and pepper, to taste
Instructions:
Heat the oven to 220C/200C fan/gas 7, keep a note of the weight to calculate the roasting time. Make incisions into the lamb using a small sharp knife at an angle, about 5cm into the meat.
Insert a slice of garlic into each of the incisions and a mixture of the herbs you're using - making sure you're pushing the herbs right into the holes. Next rub olive oil, salt and pepper all over the meat. Place into a roasting tray - we like the disposable ones for ease.
Roast for 20 minutes.
Lower the oven to 190C/170C fan/gas 5 and cook for another 15-20 mins per 500g (1 hr – 1 hr 20 mins for 2kg leg) depending on how pink you like your lamb.
Cover and rest for 15 minutes, saving your tray juices for the gravy if you wish!
