This is our take on the curry - hence the alternatives like butter if you don't have ghee!
This recipe makes enough for 2 - if you want to double up for 4, double up the chicken but go easy on doubling up the spices!
Ingredients
2 Chicken breast cut into bite sized pieces.
Ghee/Butter and oil
2 bay leaf
3 cardamon, bruised
.5 Tsp cumin seeds
1 Sliced onion
2 Tsp garlic and ginger paste (or blocks, or fresh)
1 Heaped Tsp each of Turmeric, Chilli, Ground cumin, Ground coriander
2 large tomato blended
2Tbsp Tomato paste
2-4 Chillis of your choice
Water
2 Tsp Garam masala
Good pinch Kasoori methi, (dried fenugreek leaves)
4 Cloves garlic, chopped
1Tsp Hot chilli paste/sauce of your choice
Method
Heat 2 Tbs Ghee and good drizzle of olive oil in your pan.
Add the whole spices (Bay, cardamon, cumin) - heat until fragrant.
Add the sliced onion and the garlic and ginger - fry until the onion starts to soften - add a splash of water to loosen the mixture up.
Add the spices (Turmeric, Chilli, Ground cumin, Ground coriander), tomatoes and tomato paste. Stir and cook for 5 minutes.
Add in the chillis, stir in, add the chicken and add salt. Stir the chicken into the curry well for around 5 minutes. Add some more water to loosen up the sauce, turn to a simmer, pop a lid on the pan and simmer for 15 minutes for the chicken to cook through.
Add in your garam masala, the Kasoori methi, stir in and then add your sliced garlic cloves. Now simmer with the lid off to ensure the garlic is softened and the sauce reduces (if needed) to you liking - if the sauce isn't saucy enough add a bit more water!
Service with rice or breads as you like!
