Gin Marinated Beef Flank

Gin is lovely to drink - it also makes a great marinade for beef flank!

The recipe is super easy - just shake up the ingredients in a jar, marinade the meat, ideally, overnight and griddle or BBQ the meat.


This is lovely served with a light salad and cous-cous or similar.


Ingredients (Serves 4)

  • Flank steak to serve 4

  • 1⁄4 cup spring onion (chopped)

  • 1⁄4 cup gin

  • 1 tbsp olive oil

  • 1 lemon - peel grated

  • 1 tsp pepper

  • 3 tbsp pimento-stuffed green olives (sliced)

  • 1 lemon peel grated

  • 1⁄2 onion (sliced thin)



Method:

  1. Place all ingredients in a glass jar and shake well.

  2. Place flank steak in a non-corrosive container.

  3. Pour marinade over the flank and cover. Leave to tenderize at room temperature for 2 hours or refrigerated up to 24 hours.

  4. Heat grill to high (or prepare your BBQ), remove meat from marinade. Cook for 2 ½ minutes per side for medium-rare.

  5. Serve & enjoy!
