Ingredients:
Velveting the Chicken
1 Tbsp cornflour
1 Tbsp soy sauce
1 Tbsp oil
Chow Mein sauce - Mix all the ingredients well
1 Tbsp cornflour
2 Tbsp Soy sauce
1 Tsp Brown Sugar
2 Tsp Seasme oil
1 Tbsp Water
Stir-fry chicken from your healthy meat pack OR 2 chicken breasts sliced
Oil
Spring onion/onion sliced
2 Cloves crushed garlic
Grated carrot
Any sliced veg you want to add to your stir-fry - cabbage, bean sprouts, peas, corn...
Cooked noodles of your choice
Method
Mix the ingredients for velveting the chicken really well in a bowl that will hold the chicken.
Add the chicken to the sauce and mix through really well - this will ensure that the chicken stays beautifully tender when you cook it.
Put the chicken aside while you make the sauce.
Add all the chow mein ingredients and whist well to mix together.
Heat a wok with oil and add the sliced chicken and any sauce from the velveting, to the wok - stir to sear on all sides & brown the chicken.
Add the garlic and sliced spring onion (or sliced onion) - stir fry for 1-2 minutes.
Then add your grated carrot and veg - cook for 3-4 minutes.
Add in the chow mein sauce and mix well - cook for a minute, if needed add water to loosen the sauce.
Add in the cooked noodles and stir through.
Serve!
