It is worthwhile marinating your beef overnight if you can - bring it out of the fridge 2-3 hours before you plan to cook it.

Ingredients:
Cut of Beef to Serve 3-4:
3 Oranges
Salt & Pepper
Olive oil
Veggies, mash, Yorkshire pudding to serve!
Instructions:
Juice 3 oranges and mix with olive oil, salt and pepper.
Marinate the beef in the juice of 2-3 oranges for at least 3 hours.
Roast at 200C for 1 hour 10 minutes
Check beef is cooked to your liking
Serve with all the trimmings!
We like to roast our veggies with rosemary for extra flavour!
