Puff Pastry Chicken Pie

The clocks have gone back and the evenings are getting darker... It's time to bring back comforting pies to the dinner table!

This recipe is simple and uses pre-rolled puff pastry for less stress in the kitchen! This recipe feeds 4 people, just half the quantity if you are serving two.

Ingredients:

  • Olice oil/butter/ghee for frying

  • 4 chicken breasts

  • 1 leek, washed & chopped into 2cm rounds

  • 1 onion diced (red or brown)

  • 3 garlic cloves

  • red chili sliced if desired

  • 150ml double cream

  • 1 pinch of paprika if desired

  • Salt & pepper

  • Roll of ready made puff pastry

  • Prepared pie dish




Method:

  1. Pre-heat your oven to 200C, gas mark 5 or fan oven 180C

  2. Warm some olive oil or butter or we used ghee, in a pan and add the diced onion, slice and crush the garlic and add to the pan - season with salt and sauté for 5 minutes.(Add the sliced chili at this point too if you are using it).

  3. Add the diced leeks, stirring to mix well, turn down the heat and cook until softened.

  4. Season well with salt & pepper and paprika if you wish.

  5. Then dice the chicken into bite size pieces and turn the pan back up to a medium heat - add the chicken and fry off until cooked through.

  6. Turning the heat back down add in the cream and stir well to combine, cook on a low heat for 5 minutes.

  7. Tip the contents into the pie dish. Place the prepared pastry on top and add the dish to the oven!

  8. Bake for 20-25 minutes (checking after 15minutes in case your oven is a quick baker!), when the filling should be bubbling and the pastry puffed.

  9. Serve with salad or vegetables - Don't forget to tag us in your photos!
