This recipe is easy to make and it's a great way to use up any leftovers you might have in the fridge. You can customise it with your favorite ingredients, it's a perfect breakfast, brunch or even a light dinner.

Ingredients:
1 cup of plain flour
1 teaspoon of baking powder
1/2 teaspoon of salt
1 cup of milk
1 egg
2 tablespoons of melted butter
1/4 cup of grated cheese (cheddar, parmesan or any kind you prefer)
1/4 cup of diced vegetables such as peppers, onions or mushrooms (optional)
1/4 cup of diced cooked meat such as bacon or ham (optional)
Instructions:
In a medium-sized mixing bowl, combine the flour, baking powder, and salt.
In a separate mixing bowl, whisk together the milk, egg, and melted butter.
Slowly add the wet ingredients to the dry ingredients, stirring until just combined (the batter will be lumpy).
Stir in the grated cheese, diced vegetables and diced meat (if using) into the batter.
Heat a pan over medium heat and add a small amount of butter or oil.
Once the pan is hot, pour about 1/4 cup of batter into the pan and cook until bubbles start to form on the surface of the pancake, then flip it over and cook until golden brown.
Repeat the process with the remaining batter.
Serve the pancakes hot with sour cream or any other savory toppings of your choice.
